“Cajun” humorist Wilson (who described himself as part-Cajun) was created in Roseland in Tangipahoa Parish, close to the Mississippi border. Originally an itinerant basic safety engineer, he frequently came across Cajuns during his moves, and created a skill for informing Cajun jokes and tales. Wilson’s first record of Cajun laughter sold more than a million copies; he continued to release a lot more than two dozen extra albums. He composed three comedic books: Justin Wilson’s Cajun Laughter (1974), Justin Wilson’s Cajun Fables (1982), and Even more Cajun Laughter (1984). Wilson also excelled being a chef, and hosted a favorite cooking present on public tv. Over time he issued many cookbooks, like the Justin Wilson COOKBOOK (1965), The Justin Wilson #2 Cookbook: Cookin’ Cajun (1979), The Justin Wilson Premium and Gourmand Cookbook (1984), Justin Wilson’s Outdoor Food preparation with Inside Help (1986), and Justin Wilson Searching Back again: A Cajun Cookbook (1997). Despite his nationwide reputation, Wilson angered some South Louisianians along with his stereotypical portrayal of the poorly informed Cajun who spoke substandard British.
